INGREDIENTS (MexiTuti Lasagna)
Adobo OR salt and pepper (bleh) hehehe
Start by cooking chicken breasts. I used my frying pan, filled it 1/4 with water and placed the chicken breasts in the water. Season to taste.
While chicken cooks, cut pepper, onion and jalapenos.
When chicken is cooked, shred it (I use 2 forks).
And let it cook for about 5 more minutes in the water.
Start layering the corn tortillas in the pan you will use in the oven.
Start adding the layers of chicken, cut vegetables, and cheese. I did 2 layers. But you are welcome to add more! Yumm!
**As a plus, I also added the seasoned water that the chicken was cooking in ;) it made it perfectly moist!
Finally! Top with LOTS of cheeeeeeeese! I used the whole bag of cheese ;o) **drools**
Pop in the oven for about 15 minutes...this is just so the cheese can melt and all the ingredients can come together as a delicious ONE!
**This is a good time to start on the rice!
INGREDIENTS (Spanish Rice with Ham and Beans)
Pinto or red beans
Adobo or salt and pepper (bleh)
Add rice and twice the amount of the rice in water. *For example: If you are cooking 1 cup of rice, add 2 cups of water) <<<Uhh that right there was in case you don't know how to cook rice. Which is fine...ohh with me, you will be a master of rice cooking! Hahaha *A puertorican joke...never mind ;o)
Anyways, season to taste. The sazon is what gives the rice that reddish color. It also spices up the taste.
Add beans and cut ham.
Stir occasionally and cook until rice is tender.
Done! And that took approximately the time the MexiTuti lasagna was in the oven! ;) LOOK HOW DELICIOUS!

I decided to put a little bit of sour cream on top of my MexiTuti lasagna for presentation purpouses but it was so worth it! Agh I'm hungry!
YOU MUST KNOW: I REPLACE MY 'SALT AND PEPPER' WITH ADOBO! LIKE A TRUE PUERTORICAN! ;o)
